One of the local variants of the most popular food in South Asia - Biryani.
Ingredients:
Rice 750 kg (3 cups) (3/4 boiled)
For the meatballs:
Mince meat 1/2 kg
Ginger-garlic paste 1 tbsp
Salt to taste
Onions 2 medium (sliced)
Red chili powder 1 tbsp
Green chilies 4-6
Fresh coriander
Bread slice 2
Egg 1
Flour as required
For the gravy:Potatoes 3-4 medium sized (boiled)
Onions 4-5 medium sized, sliced
Tomatoes 3-4 chopped
Yogurt 1/2 cup
Garlic paste 1 tsp
Ginger paste 1tsp
Salt, to taste
Green chilies 2-3 sliced
Red chili powder 1 tsp
Coriander powder 1 tsp
Cumin Seeds, roasted and crushed 1 tsp
Chinese salt (optional) 1/2 tsp
Dried plums 2-4
Five spices (black pepper corns, cardamon, cumin, bay-leaf)
Method:
In a large pot, heat some oil and add the sliced onions. Golden brown them. Now add the ginger-garlic paste and tomatoes. Cook well till the tomatoes break away and a thick gravy is formed. Now add all the spices and the potatoes. Stir well and cook for another 5-8 minutes. Now, add the fried meatballs and 1/2 cup water and let it simmer on a low heat for 5 minutes. Turn off the heat.
In another large pot, start the layering. First, rice, sliced green chilies and then the gravy. Repeat. Now cover with a lid (make sure its tightly closed so that the steam doesn't escape) and on a very low heat, simmer for 5-8 minutes till the rice is fully cooked. Garnish with coriander and serve!
*You may use any kind of meat you desire. Chicken/mutton/beef.
