Brownie-Cupcake with Chocolate Ganache


For the cupcakes/brownies:

Castor sugar 2 cups
Butter (unsalted) 1 cup
Vanilla essence 2 tsp
Cocoa powder 3/4 cup
All purpose flour 1 cup
Eggs 4
Salt 1/4 tsp
Baking powder 1/2 tsp
Chocolate chips 1/2 cup

For the ganache:

Cooking chocolate (use good quality cooking chocolate for better taste) 250 gms
Cream 1/2 cup


Beat the eggs with an electric beater until fluffy; add melted butter, sugar and vanilla essence. Mix well. In a separate bowl, mix cocoa powder, flour and baking powder and mix in the egg mixture.

Preheat the oven at 185 C for ten minutes. In an 8 by 8 inch baking tray or the cupcake tray pour in the mixture and bake for 25-30 minutes. (Will make at at least 6 cupcakes or one tray of brownies.)

Let the brownies/cupcakes cool. In a double boiler, melt the chocolate. Let the chocolate cool a little and mix in the whisked cream. Use an icing bag or just a plain palette knife and cover the brownies/cupcakes in ganache.

  1. Can you recommend a brand of cooking chocolate? I don't know much about baking, kind of a beginner, but I want to do it right so any help would be much appreciated

  2. I usually use Lindt's Dark Chocolate (90% cocoa content). If you are unable to find it, then use Italiano's cooking chocolate (comes wrapped in foil in a plastic box covered with a brown card-paper). Or there is a new one in the market and I've heard good about it, goes by the name, 'Nona' cooking chocolate. If you are unable to find any of them, just use Cadbury's milk chocolate (just melt and use, exclude the cream).

    1. Seems like I missed the quantity of eggs. You'll be needing 4 eggs in this recipe. Sorry for missing it out. Corrected.
