Chicken Wings with Corn Fried Rice







Ingredients:

For wings:

Chicken wings, disjointed, with skin 12
Eggs, 2
Flour 1/2 cup
Cornflour 1/2 cup
Thyme leaves, dried, 1/2 tsp
Oregano leaves, dried, 1/2 tsp
Paprika 1/2 tsp
Red chilli flakes 1/2 tsp
Salt to taste
Pepper 1/2 tsp
Garlic, 1 clove, chopped
Soy sauce 2 tbsp
Chilli garlic sauce 1/2 cup
Tomato ketchup 1/4 cup
Chilli sauce 2 tbsp

For rice:

Boiled rice, 2 cups
Capsicum, 2 tbsp
Green onion, 2 tbsp
Corn, 3 tbsp
Salt
Pepper

Method:

Mix together soy sauce, thyme, paprika, oregano, red chilli salt and pepper and apply the mixture on the chicken wings. Let it marinate for half an hour.
Mix together both the flours, corn flour and plain flour (you may also add crushed cornflakes for chunkier wings). In another bowl beat the eggs. Now take the wings, one at a time, dip them in egg, then in flour (you may double coat if you want a crunchier or thicker coat). Now refrigerate the wings for 15 minutes. Then heat oil and fry the wings (shallow fry or deep fry, your choice). Take out the wings once fried and keep aside. In another pan, heat some oil (or use the same one in which you fried the wings) and fry garlic. Put the wings in, and add chilli garlic sauce, ketchup and chilli sauce. Mix well and cook on low heat till sauce thickens. At this point you'd want to taste the sauce for salt, add more if the taste is bland. Add chopped green onions for garnish and serve with corn fried rice.

For rice, heat oil in a pan, and fry the frozen or canned corn together with capsicum and green onion. Season well. Now add the boiled rice and stir fry for 3 minutes. Serve with wings!


Nacho Salad






Ingredients:

A small pack of Doritos (any flavor)
Ice berg lettuce, 1/2 cup shredded
Olives, 2 tbsp, pitted and sliced
Jalapenos, 2 tbsp
Tomato, 1 small, de-seeded and chopped
Chilli garlic sauce or ketchup 2 tbsp or Tomato Salsa 2 tbsp
Mayonnaise 2 tbsp (optional)
Cheddar cheese, shredded, 2 tbsp

Method:

Take a big plate and empty the entire pack of Doritos. Now top it with the veggies: shredded ice berg lettuce, sliced olives, jalapenos, chopped tomatoes. In another bowl, mix together chilli garlic sauce/ketchup/salsa and mayonnaise (exclude mayonnaise if you wish) and pour it over the salad. Now top it with cheddar cheese and microwave it or grill for 30 seconds or till the cheese melts and voila, it's ready to serve!

*You can add sweet corn, bell peppers, sausages, mushrooms or any other topping as well.

Chicken Stroganoff

Chicken Stroganoff is a variation of the original dish, Beef Stroganoff, of the Russian Origin. It is basically a dish with sauteed pieces of beef or chicken with mushrooms in sour cream served with noodles - succulent pieces of chicken with a creamy sauce, an absolute delight to have.








Ingredients:

Chicken boneless, cut in strips, 1 cup
Mushrooms, sliced, 1/2 cup
Butter, 2 tbsp
Cream, 1 cup
Vinegar, 2 tbsp
Garlic paste, 1 tsp
Tomato puree/paste, 2 tbsp
Paprika, 1/2 tsp
Salt, 1/2 tsp
Chicken powder, 1 tbsp
Black pepper, crushed, 1 tsp
Noodles/fettuccine, boiled, 400 grams.

Method:

Heat a pan and melt butter. Add a teaspoon of garlic paste and chicken, and fry for 3-4 minutes. Now add tomato puree, salt, paprika, mushrooms and cook for 6 minutes. In the end, add the cream, vinegar, black pepper, chicken powder, mix well, cover with a lid, and on low flame cook for two minutes or till the sauce thickens. Garnish with fresh chopped parsley or dried oregano, and serve with noodles.
